Directions
🧂 Ingredients:
- 1 whole Goolsby Hollow Homestead chicken (4–5 lbs)
- 2 tbsp olive oil or melted butter
- Dry Rub (or use your favorite BBQ rub):
- 1 tbsp smoked paprika
- 1 tbsp brown sugar
- 2 tsp kosher salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp cayenne (optional for heat)
- 1 can of light beer (or substitute with apple cider or broth)
- Optional: sprigs of fresh rosemary or thyme
🔧 Equipment:
- Smoker (or grill set up for indirect smoking)
- Beer can chicken stand (optional, but helps stabilize)
- Wood chips (hickory, apple, or cherry work great)
🔥 Instructions:
1. Prep the Chicken
- Remove giblets and pat chicken dry with paper towels.
- Rub the entire bird with olive oil or melted butter.
- Mix dry rub ingredients and coat the chicken generously, inside and out.
2. Set Up the Beer Can
- Open the beer can and pour out (or drink!) about 1/3.
- Poke a few extra holes in the top for steam.
- Optional: Add herbs or a clove of garlic to the can for extra aroma.
- Carefully lower the chicken onto the can so it’s standing upright.
3. Smoke It
- Preheat smoker to 250°F.
- Place chicken (standing on the can) on the smoker over indirect heat.
- Add your preferred wood chips.
- Smoke for 2.5 to 3.5 hours, or until internal temp in the thickest part of the breast reaches 165°F and 175°F in the thigh.
4. Rest & Carve
- Carefully remove the chicken (use tongs + spatula).
- Let it rest 10–15 minutes before removing the can and carving.
- Serve with fresh herbs, grilled corn, or seasonal veggies.
